Everyone has that food that they basically never get tired of, right? Like you can eat it anytime, a thousand different ways, and you're still like "OMG THIS IS THE SUBSTANCE OF THE GODS AND I'VE NEVER TASTED ANYTHING SO GOOD."? Yeah, me too. For Ty and I, it's breakfast food. Anytime. Every time. All of the times. ;)
So, we're always looking for new things to make and it usually just winds up with us throwing all the relevant ingredients we have in a pan--and sometimes liking it, sometimes not so much. But this was actually a recipe we tried, really liked, and have since repeated, so I figured we'd share!
Baked Eggs with Potatoes:
- 1 potato, diced
- 2 eggs
- 3 cups fresh spinach
- 1 cup arugula
- 2 strips vegetarian bacon
- 2 tbsp coconut oil (or whatever kind of cooking oil you prefer!)
- 2 tbsp minced onion
- 2 garlic cloves, crushed
- Salt & pepper
- 1 tbsp chives
- 1 tbsp paprika
- 1/2 cup dairy free mozzarella cheese
First, preheat your oven to 350. While oven is preheating, add your cooking oil to a large pan, and saute your diced potato, minced onion, and garlic cloves over medium heat for about 10 minutes. Add in your spinach and arugula for about 2 minutes until soft. Cook vegetarian bacon according to instructions.
Spray a small baking dish with cooking spray or melt in coconut oil, and then add the cooked potatoes and minced onion to the bottom of the dish to create a base. Layer your greens on top of potatoes. Then, using a ladle, press two divets into the mixture for your eggs. Crack eggs into the divets. Sprinkle bacon, mozzarella cheese, and spices on top & place in the oven for about 15 minutes!
Leave in the oven until the egg whites have turned white and dairy-free cheese is melted!
Serve with a side of flax seed toast and some coffee or OJ, and voila!
An easy and healthy breakfast/dinner/whenever you want kind of a dish!
In my opinion, best eaten in your jammies, with coffee in your fave mug, and Friends on in the background! ;)
