Halo Top Ice Cream Sandwiches

Anyone else out there as obsessed with ice cream as we are?!

Of course you are, this is America! ;)

Fall is about to set in, but before it does (and who are we kidding, even throughout fall & winter), we're getting our ice cream fix in! We got to partner with Halo Top Creamery to bring y'all a fun, healthier (about as healthy as ice cream gets, anyway) version of the ice cream sandwich! 

And would we even be Jenna & Cortney if we didn't make these pink?! ;) So, for anyone who hasn't heard about Halo Top before, it's a low-calorie, high-protein, low-sugar...wait for it...all natural (cause, c'mon, it's 2016 and we have to at least pretend like we care) ice cream. And it actually tastes like ice cream! It's not grainy, bland, or anything like that. It's just yummy. And yeah, you're reading that carton right...280 calories PER PINT! 

When we got the opportunity to partner with Halo Top, we immediately knew we wanted to put a fun recipe together. Something cute, quick, and easy. These would work for any kind of party, or if you just need a quick sugar fix (which we often do)! You could also make any kind of cookie/brownie/whatever to be the "bread" of the sandwich, but we had a Krispy Kreme mix we were DYING to try out! And mannnnn, it did not disappoint! 


  • Krispy Kreme cake mix (or any cake mix you desire)
  • 1 stick butter
  • 1 egg
  • Food coloring (for the glaze!)
  • Halo Top Ice Cream

It's also like, a rule of thumb, that you can turn any cake mix into cookie dough with just one stick of butter and one egg, versus eggs and oil, which is what you'd use to make it into a cake. Trust us, we like cookies. And cake. We don't discriminate when it comes to dessert. 

So, you just blend up the butter, cake mix, and egg until the dough forms, and bake the cookies at 350 for about 15 minutes! While the cookies are baking, you can make your frosting! We used the Krispy Kreme flavored glaze and just added some pink food coloring, but again, you can get creative! Use you fave frosting! If you're using some type of glaze, glaze the cookies immediately after the come out of the oven. But if you're frosting them, we'd recommend waiting until they cool! 

Once the cookies cool completely, start packin' in that ice cream! We chose Halo Top's Mint Chip & Birthday Cake flavors, but other options of their delish ice cream include: Chocolate, Lemon Cake, Vanilla Bean, Strawberry, & Chocolate Mocha Chip! You can usually find them at Whole Foods! 

Again, so quick, easy, and totally adorable! Let's just say we barely got them shot before we dug in! ;)
