Who even knew National Strawberry Day was a thing?! I mean I have my Bando planner to thank for the recognition of this national, yummy holiday. There's also apparently National Oreo and National Champagne day, but one holiday at a time, right?
And how else would you celebrate other than dessert?!
I'm inspired by various foodie bloggers on the daily, and one of my all-time favorites is Chocolate Covered Katie (as I've mentioned in other recipes). She's a health food blogger with such interesting & nutritional takes on dessert, breakfast, and some dinner recipes as well! If you don't follow her yet, take this as a sign. Follow her. She's awesome.
Both of these recipes can be found on her site. It was my first time making both of them, and they turned out really good! I know sometimes cooking healthy doesn't taste that great, but Katie knows how it's done. ;)
The first recipe is her Strawberry Shortcake for One. Or two, in this case, cause I didn't want to leave my hubs out. :)
Trust me, it tastes even better than it looks.
All you need is:
- 3 tbsp flour (whole wheat, gluten free, or all-purpose)
- 1/4 tsp baking powder
- 1/16 tsp salt (I guestimated this...and it worked)
- 1 or 2 tbsp chopped strawberries
- 1/2 tsp vanilla extract
- 1 tbsp coconut oil
- 1 tbsp + 1 tsp of milk
- 1 tbsp sugar

All you need for this recipe is:
- 8 oz strawberry cream cheese
- 1/4 cup melted coconut butter or raw cashew butter
- 2 cups powdered sugar
- 1/2 tsp pure vanilla extract
- optional 1/2 cup mini chocolate chips
