Who doesn't love a mojito?!
It's one of my favorite cocktails, and Jen and I are always looking to put new twists on recipes we love! And since my hubs and I have our fancy new bar cart (shout out to Jenna for making it for us for Christmas), we have everything we need to experiment!
So, we decided to jazz up one of our classic go-to recipes. We added some pineapple and traded out lime for lemon. Crisp, refreshing, deeeeeeelish. Cause trust me, y'all. These "experiments" don't always turn out in our favor. Many a cocktail poured down the sink, or drank with a cringe on our faces cause we don't want to waste the ingredients we nastily combined. So, when one turns out the way we planned, we get excited.
So, here we go:
-2oz Vodka (We use Grey Goose, cause hellosogood)
- 2 oz Pineapple Juice
- 2 mint leaves (or more if you like a lotta mint.)
- 1 oz simple syrup
- 2 lemon wedges (one to muddle and one to garnish)
-Enough club soda to fill the glass (obvs you can add more vodka and/or pineapple juice too...just depends on how ya like it!).
Now that you've got your ingredients,
First, muddle the mint leaves & 1 lemon wedge.
Second, add the vodka (you can also use rum, but we like ours a little more crisp than sweet, thus the vodka), pineapple juice, and simple syrup.
Next, pour the mixed ingredients into a shaker, shake well, and then use a strainer to pour the mixture back into the glass. No one likes to suck up a huge chunk of mint through their straw...or maybe they do, but it's not one of my favorite things.
Then, add ice and club soda til that bad boy is full to the rim! Garnish with another lemon wedge and a few more mint leaves so you look like a professional and boom. You've basically earned your bar tending license, you clever mixologist! You can probably now charge people to come to your parties.
